Picky Eater Bento #3! Sneaky Vegetables Back to School Recipes!

(lively, bouncy music) – Hey Munchies, we’re midway through our picky eater bento mini series this week and today is sure to be a hot one because it is highly requested, how to sneak in those veggies. I wasn’t a huge veggie
fan for most of my life. I had to really work to learn
how to incorporate them, but there are actually a
lot of ways to add veggies and to be pretty sneaky about it. Let’s start with our
turkey surprise meatballs. Can you guess what the surprise is? (lively rhythmic music) To a bowl I add ground turkey with grated carrots and yellow squash, along with diced onion, oats, an egg, vegetable broth and salt. Mix to combine. The key is getting those veggies small so they mix right into
the meat discretely. I use a super small cookie scoop to make extra mini meatballs, roll them so they’re nice and round, and add them to a baking dish
and bake until cooked through. For even more veggie goodness I’m serving these lettuce wrapped. Some picky eaters will
actually go for this because it’s crunchy and fun. So don’t knock it ’til you try it. But you could of course
also make a meatball sub. I’m adding some ketchup to the side because that is a picky eater fav, but marinara would also work. Or, serve these with toothpicks and make it a fun dipping game. Next we’re sneaking
veggies into baked goods, pumpkin zucchini mini muffins. Can you believe pumpkin
season is almost here? Thumbs up if you want pumpkin recipes. First, blend oats into a flour. Then add in pumpkin puree, eggs, Greek yogurt, maple syrup, cinnamon, pumpkin pie spice or additional cinnamon, baking powder, baking soda,
vanilla extract, and salt. Blend. I love blender muffin recipes
because they’re so easy. Then I can stir in some grated zucchini which is going to add so much moisture, but you won’t really taste it so it’s great for being sneaky. Feel free to add in additional mix-ins like nuts or chocolate
chips if you prefer. Transfer the batter to a muffin tin. I use a cookie scoop and a mini muffin tin and bake until a
toothpick comes out clean. Okay, yes. Nut-free, gluten-free,
veggie packed and delicious, I am going to say picky eater approved but you should test it out for yourself. If you’re enjoying today’s bento box, be sure to subscribe and hit the bell so your notified of new videos. More bentos are coming! I try to get fruits and
vegetables into every box in their whole foods form too. Sneaky is good, but it’s also good to develop a healthy
relationship with vegetables and acknowledge that
sometimes we’ve gotta eat them and that’s okay. So first we’ve got carrots. I used a peeler to get thin strips. It changes the texture to be
softer and less intimidating and makes it more fun to eat. Sometimes a simple switch can be new inspiration for picky eaters. I’m also adding cucumber, but, did you know that
cucumber is actually a fruit? Say what? So we’ve got a sneaky
fruit rather than veggie with these cucumber medallions. And when it comes to raw vegetables, sometimes dips are just
a must with picky eaters. That’s okay. Choose your picky eater’s favorite, ranch, salsa, guacamole or other, and make sure it’s
accessible with those veggies so they’re more likely to be eaten. For our last sneaky component we’re turning cauliflower into popcorn? Yes!
(upbeat, melodic music) I am simply tossing
small cauliflower florets with oil and seasoning. I use salt and garlic powder, but you could also use Parmesan or anything that you’re picky eater likes. Transfer to a baking sheet and roast until golden and tender. Okay, so it’s roasted cauliflower but it actually eerily resemble popcorn and something as fun as a title can be inspiring with food too. This is great as a warm
snack after school or work but it could also be fun cold. And that is the sneaky veggie box, but you’d never know, eh! And again, remember you don’t have to recreate
these boxes I’m sharing exactly as is, you can make them your own. Mix and match with your favorites to get your favorite bento, or the perfect bento for your picky eater.     Ooooooo….I love popcorn broccoli! I don’t know why I didn’t think to do cauliflower, too! I was one of those weird kids that loved veggies. Unless it was beets, rutabaga or celery, I was ABOUT IT. 🙂 As an adult, and thanks to you, The Domestic Geek and a bout with anemia I found out that fresh beets can be sweet and delicious! We only had canned. We were waaaay below the poverty line and there was a time when we had to supplement with food that had been picked from the trash. EVEN THAT can’t make me eat a RUTABAGA!

    My kiddos do pretty good with vegetables and if there's a new one that I introduce them to and they don't like it, I'll wait a month or two and make that same veg but prepare it in a different way and that typically works.

    Be still my heart. I LOVE this mini series!!! My 12 year old son has been crowned World Champion Picky Eater from 2006-2018; we are so proud.     More pumpkin recipes please, especially if they're gluten/dairy free! I'm sneaky with veggies with my autumn bread 🙂 Whole wheat flour, pumpkin, banana, carrot, and zucchini are all in the loaf! But now that I'm gluten-free, I'm going to have to do some tweaking and figure out if I can still make it work

    My kids are not crazy picky now that they are a little older , but my oldest when he was 4 refused to eat spaghetti noodles. It had to be another shape , like bow tie or shells anything but spaghetti. Went on for 2 years. It wasn't a big deal , I just thought it was a funny thing to do lol.
