Our Favorite Lemon Herb Couscous Salad Recipe

and welcome to our kitchen. We’re showing you how to make our 20 minute
Lemon and Herb Couscous Salad. We’re using pearl couscous in our salad
today, but any small pasta or other kinds of couscous will work nicely in it’s place. Start by cooking the couscous — this variety
takes about 10 minutes. While it cooks, chop the veggies. We love cucumber for crunch and fresh tomatoes
for color and flavor. For freshness we add lots of herbs — use
what you love. Here we’re chopping up parsley and mint,
but dill, tarragon and basil would also be excellent. We are looking for a fine chop. The dressing is really simple. Start with olive oil then add Dijon mustard,
a little honey, lemon zest and lemon juice. Season with salt and pepper then whisk until
blended. When the couscous is cooked, drain it then
add it warm to the dressing. By adding it warm, the couscous absorbs more
flavor from the dressing. To finish the salad, add the veggies and the
herbs then for even more texture, throw in some chopped nuts — these are walnuts — and
some raisins (we like golden raisins). And that’s it, our lemon and herb couscous
