Welcome all! Papa G here. Today I present low carbohydrate egg salad. being on a low carbohydrate diet for over a year now, I know how
important it is to have something pre-made in the refrigerator when I want
something quick and delicious for lunch; or just an easy snack. This simple recipe
is just the thing. Let’s get started… We’re going to start by steaming 7 eggs.
You can boil them if you like, but i prefer the color and texture of steamed
eggs. They just seem a little more evenly cooked to me and the Yolks a bit less
chalky. Now I’m using an electric steamer here and this is the cooking method i
prefer; because not only do i like things simple, I like them easy – and I’m little bit
lazy to boot. You can, however, steam your eggs on the stove top as well. Just bring
a fingernail depth of water to a boil; place your eggs gently in without
cracking them; reduce the heat to medium; cover and cook for about 10 minutes. This method is a little harder to judge the doneness though, and just like I said, I’m
not one to pass up simple. My steamer also came with a poaching tray, of which
I’ll be using in a future video. So be on the lookout for that. It’ll be my
low carbohydrate version of eggs Benedict. When the eggs are done, you’ll want to put them in an ice bath immediately after cooking and gently crack the shells as
they cool . This will help with two things. First, it’ll stop the cooking process.
Second, it’ll help with the peeling once they’re completely cooled. Now look at
this. Have you ever seen a more beautiful egg? There’s no gray around the yolk and
the yolk is not chalky at all. After we roughly chop our eggs, we’ll place them in
a mixing bowl and start constructing our dish. To our eggs will add some
mayonnaise; some finely chopped celery; some green onions; a little bit of apple
cider vinegar; some salt; and we’ll finish off with some ground black pepper. You
want to mix this well until thoroughly combined and that’s it. Place it in an
airtight container and store it in the refrigerator. This can be served many ways. With my low carbohydrate buns… check out the link in the
description. It also makes a wonderful wrap
when paired with a low carbohydrate tortilla. I’ll have a link for that in the
description as well. Or simply serve it as a dip with celery for a quick snack
or appetizer. Either way, I’m sure it will please. I hope you enjoyed this video. If
you did, please like and subscribe and I’ll see you next time!
