On behalf of Expert Village my name is Elizabeth
Muller and today we’re making Chicken Fricassee Spanish Style. I’m taking my vegetables that
I’ve cut up in small pieces and I’m going to go head and place them in the pot so when
I put it to boil it’s going to be all in there nice and chopped up and cut up. Just turn
that on high heat. Again this is called a sofrito and we use this a lot in Spanish cooking.
Sofritos are different based, green or, we can use green or red tomato. I kind of start
stirring it up. It’s going to look like this right now. Let that boil for a bit. Let that
boil and simmer down for a little bit. Create a little thickness to it and then we’re going
to place our chicken in there, cut up and we’ll add the other ingredients little by
little. We don’t want to add them all at once.
