Chicken Cobb Mason Jar Salad (With a Clean Ranch Dressing!) | A Sweet Pea Chef

Hey there, Lacy here with A Sweet Pea Chef,
and I love salads and meal prep and so today we’re gonna put those two amazing things together
and make a delicious Chicken Cobb Mason Jar Salad that is so delicious and it’s going
to last you the whole week. First we need to cook the chicken, so season
the chicken breast with sea salt, black pepper, and garlic powder. Now heat olive oil over
medium-high heat. Once hot, add the chicken and cook until well browned on all sides and
cooked through, about four-six minutes per side. Once the chicken is cooked through,
remove it from the pan and then dice it into bite size pieces. We want to allow it to completely
cool at this point. To make the clean ranch salad dressing, whisk
together the plain Greek yogurt, almond milk, apple cider vinegar, dried dill weed, garlic
powder, coconut sugar, and a little bit more sea salt, and then we’re going to set this
aside. Okay, now for the fun part, now we get to
assemble all this good stuff together. Using a quart size Mason Jar, layer about two to
four tablespoons of our delicious ranch salad dressing, followed by some grape tomatoes,
the cooled diced chicken, garbanzo beans, diced cucumber, crumbled Gorgonzola cheese
and top it off with a baby spring mixed lettuce. I usually make about five of these at the
same time and then that way, I have a delicious Mason Jar salad ready to go throughout the
week because they’ll last in the fridge for up to five days. For serving, I love to add a little bit of
diced avocado and a hard boiled egg. Those are delicious on this salad, but they don’t
last as well inside the Mason Jar, so you want to have them the day of. Now you have a tasty fresh salad that is gonna
be waiting for you all week to keep you on your healthy lifestyle. Make sure you give
